A natural treat from the swedish forest

Many people have discovered lingonberries to be a delicious accompaniment to all sorts of poultry as well as traditional Swedish meatballs.

Try this recipe for a touch of Swedish tradition.

Swedish Meatballs with Cream sauce and Lingonberries
(4 servings)

1/3 cup bread crums
2/3 cup milk
1/2 pound ground beef
1/2 pound ground pork
1 1/2 teaspoons salt
1 egg
2 tablespoons finely chooped onion
dash pepper
butter or margarine

In medium bowl combine bread crumbs and milk. Let stand about 10 minutes, then stir in beef, pork and salt. Stir in egg, onion and pepper and mix well. Shape into 24 balls and place on a wet cutting board. In skillet melt small amount butter. Add meatballs, in batches. Quickly brown the surface of the meatballs, then fry for about five more minutes until evenly browned and cooked through. Remove from pan and keep warm while cooking remaining meatballs. Serve meatballs with boiled potatoes, cream sauce and Felix Lingonberries.
