Lingonberry muffins
Yield: 12 muffins
Preheated 400° oven
1 stick + 2 tbsp butter or margarine, room temperature
3/4 cup sugar
2 eggs
1 1/4 cups flour
1 teaspoon vanilla
1 teaspoon baking powder
1/4 cup water
1/2 cup Felix Lingonberries
Powdered sugar
In medium bowl beat butter and sugar until fluffy. Beat in eggs, one at a time, until blended. In small bowl combine flour, vanilla and baking powder; stir into butter mixture. Blend in water. Spoon mixture into muffin cups and top each with a teaspoon of lingonberries, bake about 15 minutes.
Remove from pans and sprinkle with powdered sugar.
